Raw Cashew Dip

This very easy and healthy recipe is excellent with crunchy vegetables. We often have it with steamed broccoli – a favourite on shoots. It would work very well with grilled meat on the BBQ – Or delicious with grilled veggies. We sometimes add more water to it and serve as a dressing with a salad.


Put all ingredients in the food processor / blender (if using blender you might want to add some water) and whizz untill purred.

  • 200g cashew nuts
  • 5cm peeled ginger
  • 2 garlic cloves
  • 1 chilli
  • 1 tbsp tahini
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 limes squeezed
  • small bunch coriander and mint
