Sweet potato pancakes

Method

Serves 4

Peel your sweet potato and chop into chunks, boil until soft and then mash. Sauté your leeks and chorizo in a little olive oil until your chorizo (optional) is nicely crisp and your leeks soft.

In a mixing bowl mix your flour, baking power, milk and egg together until smooth. Then mix in the ground cumin/coriander, fresh coriander, cheese, chilli, leek and chorizo mix, salt and pepper and then your mashed sweet pot. Then whisk the egg white to soft peaks and fold gently into the batter.

Pur a little oil into a pan, once hot put no more then 3 tablespoons of the batter in per pancake. make nice and crispy on both sides.

This is very good with a poached egg and wilted spinach with fresh coriander and chilli to serve.

  • 1 medium sweet potato
  • 2 finely sliced leeks
  • 2 chorizo sausages (optional), chopped into little bits
  • 120 g self raising flour
  • 1 tbsp baking powder
  • 150g milk
  • 1 egg
  • 2 finely chopped deseeded green chillies
  • a bunch of finely chopped coriander
  • 1/2 tbsp ground cumin
  • 1/2 tbsp ground coriander
  • 50 g mature cheddar
  • 1 egg white
  • glug olive oil
