Method

Put all of your ingredients into a food processor and wiz until pureed. once done- pour into a grease proof lined baking tray and sprinkle the remaining coconut. Set in the fridge for at least 5 hours, best to leave over night. Once set carefully take out of the tin by pulling the paper up around the edges- from here you can slice your mixture up into bars (size to suit). They are the most delicious things to take with you for the day as an energy boost. Also can be kept up to a couple of weeks covered.

  • 150 g Medjool dates, pitted
  • 150g cashew nuts
  • 100g almonds
  • 100g cocoa powder
  • 100g shredded dry coconut, save some for the top
  • 2tbsp maple syrup
  • 4 tbsp flax seed
  • 2 tbsp chia seeds
  • good glug of water
