Rice to be cooked and set aside.
Fry up your shallots, ginger, garlic, chili, coriander stalks and curry leaves in a pan (we use a wok) till translucent and fragrant.
Add the spices okra and tomatoes and cook down for 10 minutes.
Break your smoked fish into the pan, coating all the flavors together with the rice.
Mix the yogurt ingredients together seasoning to taste.
Serve on the kedgree on a platter, adding the cliced in half eggs, dollop the yoghurt around, adding fresh chilli, sping onions and also limes to the side

- Smoked fish- haddock, cod, kipper
